TRADITIONAL RUSSIAN SOUP “UKHA” FISH SOUP – RECIPE


There are as many recipes for traditional Russian fish soup, known as or UKHA, as there are cooks in Russia. It can be made elegantly with a clear fish stock.
Lets start.

Ingredients
Serves 4 people

2 red snappers body about 500 g each
2 heads & 2 tails of red snappers
1 big white onion
1 celery
2 small potatoes
1 carrot
8 cherry tomatoes
2 bay leaves
1 lemon
50 ml of vodka
A Bunch of dill
Bunch of coriander
2 tsp of salt
1 tsp of white pepper
1 tsp of dried coriander
1 L of fish stock
1 L of water
2 dried bay leaves

Method

1) Dice the potatoes into 2 cm cubes. Finely chop the coriander. Slice the carrot, onion into half rings. Slice the lemon. Chop the coriander & dill. Slice the red snapper body into 3 pcs.

2) At a high temperature stove add 1 L of fish stock into the pot, add 1 L of cold water, add the heads and tails of the red snapper. Bring water to a boil. Reduce the temperature to medium low. Simmer for 20 min. Add sliced red snapper fish, diced potatoes, sliced celery, onion, 2 dried bay leaves, 50 ml of vodka & 1 tsp of dried coriander. Mix all the ingredients. Cook for 15 min. Add 2 tsp of salt, 1 tsp of white pepper, 8 cherry tomatoes. Simmer the soup for a further 5 min.

3) Add few ladle spoons of the soup into a serving bowl. Add 1 pc of the fish into the soup. Add 1 slice of lemon. Garnish with fresh coriander & dill.

Traditional Russian Sour Cabbage Soup Recipe
Sour Cabbage Soup or Kislye Shchi is a traditional Russian soup. This sour cabbage soup recipe is made with fresh pork ribs. Some cooks make theirs with beef brisket and cracked beef marrow bones.

Ingredients
Serves 4 people

600 g of pork ribs
400 g of sour cabbage
2 medium size potatoes
1 small zucchini
2 medium size tomatoes
1 medium size carrot
1 red capsicum
1 medium size white onion
3 garlic cloves
1 bunch of coriander
1 bunch of dill
2 tbsp of vegetable oil
2 tsp of salt
1 tsp of white pepper
3 dried bay leaves

Method

1) Slice onion, dice capsicum, slice carrot, slice zucchini into thin strips, dice tomatoes & potatoes into medium size cubes. Finely chop garlic cloves, dill, coriander.

2) At a medium high temperature stove add 1 tbsp of vegetable oil into a pot. Add pork ribs & stir fry the ribs until pre-cooked & golden color. Remove the pork ribs from the pot.

3) Use the same pot & add dice capsicum, sliced carrots, sliced zucchini, diced onion. Stir fry for 2 min. Add diced tomatoes, sour cabbage & fry for 5 min. Add diced potatoes, 1 tsp of white pepper, 2 tsp of salt, pork ribs. Cover with the water. Bring water to boil & cook for 10 min. Add garlic, dill, coriander & bay leaves. Reduce temperature to medium & simmer the soup for 30 min.

4) To serve 1 portion add a few ladle spoons of the soup into a serving bowl. Add a few pork ribs into the soup. Garnish with fresh chopped dill and fresh chopped coriander.

Ingredients:
100 g Siam Tulip
200 g Dried Snake-head Fish
1 ½ c. coconut milk
50 g young tamarind leaf
6-7 shallots
3 Goat Pepper
1 lime
1 tsp. sugar
1 tsp. fish sauce

How to:
1.In the pot, add coconut milk and bring to the boil until aroma.
2. Add the Siam Tulip and dried snake-head fish to boil until cooked. Followed by young tamarind leaf.
3.Season with sugar , fish sauce and lime juice . Add goat pepper to stir well and turn off the heat.
4. Transfer to a serving bowl. Ready to eat with streamed rice

Pork Rips Soup with Pickle Lime and Winter Melon [ TOM FUCK MA NOW DONG ZE HRONG MOO]

Ingredients
Winter Melon
1 litter of water
500 g of Pork Rips
1 tablespoons Fish Sauce
Pickle Lime
Coriander
Coriander root
Garlic
Pepper
Dried Shiitake mushrooms

How to:
1. Put about 1 liter of water in the pot, bring to the boil and add Coriander root , garlic and pepper (Pounded thoroughly) to together with the pork ribs. (Chopped into pieces)
2. Dried Shiitake mushrooms cut into pieces and boiled. Season with soy sauce.
4. As the pork ribs are cooked, add the winter melon into the boil until the cooked. to reduce the fire and put the pickled lime. Followed by pickled lime juice, turn off
5. Transfer the serving bowl Sprinkle with coriander.

Egg Roll Chicken Soup [ Tom-jied Khai Muan ]


This is a Chinese soup of eggs roll in boiled chicken soup. This menu is comfort food that is a staple in Chinese restaurants and is simple to make with just an easy ingredients.

Ingredients :
3 Spring onion
1 Egg
1 tbsp Water
1/2 tsp Cooking oil
1 cup Minced chicken
2 cups Chicken stock
2 Garlics
1/2 tsp Pepper
1 tsp Oyster sauce
1/4 tsp Sugar

How to :
1.Mix 1 egg, cooking oil and water together. Stir until mixed
2.Preheat oil over medium-low heat, add stirred egg in a wok and fry until cooked
3.Transfer stirred egg to a plate, followed by putting 1 cup minced chicken, roll up and tie by using 3 spring onions
4.Boil 2 cups Chicken stock and add garlics and wait until the soup is boiling
5.Season to taste with oyster sauce, sugar and pepper
6.When the soup is boiling, add roll egg in a wok
7.Simmer for 10 minutes or until the chicken is cooked
8.Transfer roll egg chicken soup into a serving bowl

Chicken Soup with Seaweed [ Soup Kai Sar-raii ]


A light and lovely soup when you need a bit of a detox. Eating hot seaweed soup would help you. That it can be prepared quickly and yet tastes so delicious at the same time.

Ingredients :
4 Chicken wings
1/4 cup Chopped carrot
8 Seaweeds
1/4 tsp Sugar
1 cup Tofu
1 Piece Seasoning powder
1/4 tsp Pepper
1 tbsp Bean pasted
1/2 cup Oyster sauce
6 cups Water

How to :
1.Cut all chicken’s skin into lines
2.Slice the tofu into a small square
3.Turn on a wok over medium-high heat and add 6 cups water
4.When the water is boiling, add 1 piece seasoning powder, followed by adding chicken wings then add chopped carrot and stir well
5.Scoop out all bubbles [ The bubbles are from the chicken when the water is boiling ]. After that add sliced tofu
6.Season to taste with bean pasted, oyster sauce, pepper and powder. Stir until mixed
7.When everything is done, add seaweeds and turn off the heat
8.Transfer to a serving bowl

1/2 cup Oyster sauce
1 tsp Sugar
1 tsp Pepper

How to :
1.Slice all mixed mushroom into a bite-sized
2.Slightly crushed garlics
3.Heat oil in a pot over medium-high heat, fry garlic until fragrant
4.Then add coriander root and mixed mushroom. Stir-fry them well, followed by adding 3 cups rice and stir until mixed
5.Put 6 cups chicken stock and boil until the soup is boiling
6.Then add coccinia grand into a pot
7.Season to taste with oyster sauce, pepper and sugar
8.Transfer coccinia grands soup with mushroom into a serving bowl

This soup features savory baked tofu, lots of noodles, and tender veggies simmered with special seasonings, this soup is very easy and tasty.

INGREDIENTS:
* 500 grams noodle paste
* 250 grams minced pork
* 100 grams yellow tofu, cubed
* 100 grams shitake mushroom
* 150 grams chinese sausage
* 150 grams sweet radish
* 2 cups bean sprout (scald in boiling water)
* 2 coriander root
* 1 tablespoon minced garlic
* 2 tablespoons black soy sauce
* 2 tablespoons soy sauce
* 2 tablespoons oyster sauce
* 2 tablespoons sugar
* coriander leaves
* 2 tablespoon finely chopped spring onion
* fried garlic (for garnishing)
* cooking oil

HOW TO:
1. Heat oil in a wok over medium heat.
2. Add chopped shitake mushroom and garlic. Stir until fragrant.
3. Add minced pork. Keep stirring until the pork is nearly cooked.
4. Season with oyster sauce, soy sauce, sugar and black soy sauce. Stir until all ingredients mixed well. Remove from heat.
5. Put a little water.
6. Add coriander root, sweet radish and yellow tofu.
7. Steamed noodle paste for 5 minutes and Scald bean sprout in boiling water.
8. Sprinkle with fried garlic, chinese sausage, chopped spring onion and coriander leaves. Serve immediately with prepared dipping sauce.

Ingredients :
2 cups Chicken stock
4 Eggs
1 pack Kaffir lime leaves
10 Dried hot chillies
4 Thai hot chillies
1/2 cup Milk
1 tbsp Roasted chilli paste
1/2 Shallot
6 Sliced galangal
1 Lemon grass

How to :
1.Crack 4 eggs into a bowl and stir until mixed
2.Finely shred kaffir lime leaves
3.Slightly crushed Thai hot chillies
4.Slice shallot and Lemon grass finely
5.Heat oil over medium heat, fry stirred egg in hot oil until brown and golden
6.Flip to the other side and cut into a small piece then add chicken stock, roasted chilli paste, shallot, kaffir lime leave, lemon grass, galangal, Thai hot chilli and dried hot chilli
7.When the soup is boiling, tear the enoki mushroom into a wok and stir again until boiling
8.Transfer to a serving bowl and serve while hot

Winter Melon Soup With Chicken ( Tom Fuk Nong Gai )

Ingredients:
· Carrot
· 5 Wing sticks
· 1 Commander root
· 1 tsp Pepper
· 4 Mushroom
· 1 Seasoning cube
· 1/2 tsp Salt
· 1 tbsp. Soy sauce
· Winter melon

How to:
1. Cut the winter melon
2. Cut the carrot into stick
3. Boiled the water in a pot, then add commander root in, and add seasoning cube in until its melt
4. Add wing stick, carrot, winter melon, pepper, shiitake mushroom, salt, and soy sauce
5. Take time about half an hour to cooked.
