Special Pork Humba – Braised Pork with Salted Black Beans


Pork Humba is a sweet pork dish that resembles the famous pork adobo in terms of appearance. Pork belly, pork hocks, and pork ham are the 3 most common pig parts used to make this delightful masterpiece. This is special version with more ingredients.

Ingredients:
– 2 lbs pork belly
– 1 bottle of soda
– 1 large onion
– 5 cloves garlic
– 1 can salted black beans
– 2 tablespoons soy sauce
– 2 tablespoons vinegar
– 2 ½ tablespoons brown sugar
– ½ cup dried banana blossoms
– 3 pieces dried bay leaves
– 1 teaspoon black pepper

Procedure:
1. Prepare the vegetables. Mince the garlic. Slice the onion into medium-sized pieces.
2. Slice the bananas and fry it in medium heat.
3. Heat the cooking pot then brown the pork belly.
4. Add the onions and garlic and cook until the onions are soft.
5. Put-in the soy sauce, peppercorn, bay leaves.
6. Pour-in the pineapple juice and let boil. Simmer until the pork is tender (add water as needed).
7. Add the vinegar and wait for the mixture to re-boil. Simmer for 3 minutes.
8. Spoon-in the salted black beans and brown sugar then simmer for 5 minutes.
9. Add the dried banana blossoms and simmer for 5 to 8 minutes.
10. Transfer to a serving plate and serve. Share and enjoy!

Ingredients:
100g Prohok Fish
300g Pork
100g Peanuts
1 Garlic
6 Small Red Chillies
400g Fresh Coconut Milk
50g Dried Red Chillies
100g Pea Eggplants
100g Small Eggplants
100g Wing Beans
100g Long Beans
3 Kaffir Lime Leaves
4 Sticks Lemongrass
50g Turmeric
50g Galangal
3 Small Limes

For Seasoning: Pepper, Salt, Chicken Stock

For dipping vegetables:
1. Chop the long beans, wing beans, and eggplants to dipping size.
2. Make a paste with lemongrass, turmeric, galangal, garlic and chilli.
3. Add paste along with chopped dried chilli to a heated frying pan with oil. Mix together.
4. Add a little of the coconut milk along with kaffir lime.
5. Add salt and sugar to season.
6. Add finely chopped prohok and stir well.
7. Add ground pork and stir well.
8. Add pea eggplants, extra chillies, and squeeze in the juice from the limes.
9. Continue stirring so well mixed then add remaining coconut milk.
10. Allow to simmer and thicken.
11. Serve with chopped dipping vegetables.
12. Enjoy!

1) Using a big salad bowl
2) Add the diced boiled pork
3) Add the diced potatoes
4) Add the diced carrots
5) Add the diced hard boiled eggs
6) Add the diced marinated pickles
7) Add the green peace
8) Add 1/2 Tsp of salt
9) Add 1/2 Tsp of ground black pepper
10) Add 3 Tbsp of mayonnaise
11) Add Tbsp of dijon mustard

Final steps before serving:
1) Thoroughly mix all the ingredients
2) Refrigerate salad for 1 hour
3) Put 6 tbsp spoons of the salad into an small glass bowl
4) Garnish with fresh coriander leaves
