Amazing White Snapper Fish Pie Recipe


Ingredients :
2 puff pastry sheets of 30 cm diameter
800 g of white snapper fillet
2 onions
Handful of dill
Handful of coriander
3 hard boiled eggs
2 tbsp of fresh lemon juice
1 cup of jasmine rice
1 fresh egg
2 dried bay leaves
2 tsp of salt
2 tsp of ground black pepper
2 tbsp of olive oil

1) Add 1 cup of white rice into a bowl. Cover the rice with cold water. Leave it soaking for 30 min. Add the rice into a pot with simmering water. Add 2 tbsp of lemon juice. Reduce the stove temperature to medium low. Mix the rice and cook it for 15 min.
 
2) Slice the onions into half rings. Chop dill and coriander. Dice the eggs. Slice the fish fillet into 0.5 cm strips.

3) In a preheated stove at a medium high temperature add 1 tbsp of olive oil into a frying pan. Add half onion rings, Salt and pepper. Stir fry for about 2 min and set it aside.

4) In a preheated stove at a medium high temperature add 1 tbsp of olive oil. Add fish strips, 1 tsp of salt, 1 tsp of ground black pepper. Mix all ingredients and stir fry for 5 min. Add dill and coriander. Mix all the ingredients. Switch off the stove and set the mixture aside.

5) In a baking pan covered with baking paper add the first circular puff pastry sheet to cover the bottom of the pan. Pinch with a fork in different places the pastry sheet. Add half of the white rice portion, add half of the onion half rings, half of the fish strips, 1 dried bay leave in the center. Repeat the same steps with the rest of the ingredients. Cover with the second pastry sheet. Fold the edges of the pastry sheet around the baking tray. Make 3 small cuts on the pastry sheet.

6) Bake at 180 degrees Celsius for 25-30 min.

7) Pie is ready. Let’s slice it into 4 pieces.

1 Pangasius fish
1/2 Mango
1 cup All purpose flour
1 Lemon
1 tbsp Ginger
3 Kaffir lime leaves
1 Lemon grass
1/2 Onion
1 tbsp Fish sauce
1 tbsp Lime juice
1/4 cup Palm sugar
6 Hot chillies
5 Dried chillies
1 tbsp Roasted peanuts
1 tbsp Roasted chilli paste

How to :
1.Cut pugnacious fish and chop into a bite-sized
2.Slice and cut mango into strips
3.Finely slice lemon
4.Cut outer skin and dice the ginger
5.Shred kaffir lime leaves
6.Slice the onion
7.Slice lemon grass into a small piece
8.Chop and mince hot chillies
9.Mix the fish with all purpose flour, then deep-fry until golden and fragrant
10.Flip to the other side and deep-fry until both sides are cooked
11.Remove from a wok and drain on sieve
12.Mix palm sugar, fish sauce, lime juice, roasted chilli pate and onion together
13.Followed by lemon grass, lemon, chilli , ginger, kaffir lime leave and mango. Stir until mixed
14.Transfer fried fish to a serving plate and serve with lui-suan sauce

Deep fried Red Tilapia with Sweet Sauce Trimmings [ PLA TUM TIM JEAN]

Ingredients
1 Red Tilapia
100 g Ginger
100 g Black fungus
200 g Tomato
50 g Spring onion
50 g Coriander
6-7 Goat pepper
1 Onion
Seasoning

2 tsp. fermented bean sauce

How to:
1.Deep fry red tilapia in plenty of oil over medium heat until golden brown. Set aside.
2. Discard the oil, only 1 tsp. In the saucepan and add julienned ginger. Stir fry until fragrant. Season with sugar, fish sauce, vinegar and fermented bean sauce.
3. Add the tomatoes, black fungus , carrot and onion. Simmer it for a while until the sauce is thicken. Add diagnosis cut goat pepper and cut in 1 inch spring onion and turn off the heat.

Spicy Salad with Fresh Pangasius and Water Mimosa [ Pla Luak Yum Pak-ka-chet ]


This recipe combines boiled pangasius fish with water mimosa spicy salad, An Asian dressing and some punchy red chilli for a light and satisfying supper dish. There are only 6 ingredients which are easy to find in local market or supermarket.

Ingredients :
1 Pangasius fish
1 cup Water mimosa
1 tsp Sugar
1 tbsp Soy sauce
6 Hot Chillies
1 tbsp Lime juice

How to :
1.Chop pangasius fish into a bite-sized
2.Slice and mince hot chillies
3.Turn on the heat over medium-high heat, add water and boil until the water is boiling
4.Then add chopped pangasius fish in hot water
5.When the water is boiling, transfer the fish into a dish
6.Use the sam boiled water, add water mimosa and boil until it’s soft
7.When the water is boiling or it’s soft, transfer to a bowl
8.Mix sugar, soy sauce, lime juice and chilli. Then add boiled water mimosa and boiled pangasius fish. Stir until mixed

7.Dressing : mix lime juice, palm sugar, carrot, fish sauce, chilli, kaffir lime leave, lemon grass and shallot together
8.Transfer fried fish on a serving plate then topped with spicy lemon grass salad

Fish sauce 1tbs
Red curry 1tbs
Pork seasoning 1tbs
Sugar 1tbs
Sweet chilli sauce 1tbs
Light soya sauce 1tbs
Coriander 3 lines
Oil

How to cook:
Prepare the fish by cutting
Fry the fish
Prepare the ingredients
Make the sauce
Put the sauce on top of the fish

Fish Soup with Rice [ Khao-tom Pla ]


A classic breakfast and dinner for Thai people. It’s good for people to eat this recipe in breakfast or dinner because it is warm, mild and filling, without being too heavy in morning and night. This fish soup with rice can translate to boiled rice with chopped fish.

Ingredients :
4 cups Rice
6 cups Water
2 Pangasius fish
2 Spring onions
2 Coriander roots
Coriander leaves for garnish
3 Peeled garlics
1 Chicken stock cube
1/4 cup Oyster sauce
1/4 tsp Sugar
1 tbsp Soy bean
1/2 tsp Pepper

How to :
1.Slice spring onion into a small piece
2.Chop Pangasius fish into a bite-sized
3.Slightly crushed garlics
4.Slightly crushed coriander roots
5.Chop coriander leaves for garnish
6.Heat oil in a wok. Fry garlic, coriander root and Pangasius fish then add 6 cups water
7.When the soup is boiling,add 4 cups rice and wait 5 minutes until boiling again
8.Season to taste with black soy sauce, oyster sauce, sugar, pepper, soy bean sauce and chicken stock cube.
9.Then add chopped spring onion and stir until mixed
10.Transfer to a serving bowl and garnish with coriander leaves
